This is the fourth Meadowlands unflavored single origin chocolate bar we've reviewed. You can read reviews of their other three bars here: Dominican Republic, Peru, and Venezuela.

As with the others, the only ingredients in Wild Harvest Bolivia were 70% cacao beans and 30% cane sugar.

Inside a pink paper sleeve, the 2.5 ounce Bolivia bar came wrapped in gold foil-sided waxed paper. It was scored into 24 pieces.

The surface of the chocolate was smooth, with an uneven sheen and tiny bubbles in some corners. Its color was a medium-dark brown Bracken (PANTONE 19-1015). The bar had a hard snap.

The aroma was strongly floral, with scents of both lavender and jasmine. I also smelled roast, fruit, and earth.

After an initial earthy and tannin start to the taste, spices came forth, with a particularly strong anise flavor. Several other flavors developed as well: fruit, primarily date, sesame, roast with smoke and tea, and some nuttiness. It also tasted sweet and the tannin was evident throughout.

Meadowlands described Venezuela as "hints of lavender, toasted sesame & dates".

Wild Harvest Bolivia had a smooth melt, with a bit of fudginess. The chocolate flavor lasted 35 to 40 seconds after the chocolate was gone, giving a length on the far end of medium. The finish was tannin and somewhat acidic.

Meadowlands makes four unflavored single origin chocolate bars: Bolivia, Dominican Republic, Peru, and Venezuela. All of them are made from only cacao beans and cane sugar.

Venezuela came wrapped in gold foil-sided waxed paper inside a purple paper sleeve. The 2.5 ounce bar contained 70% cocoa solids and had a best before date of April 4, 2016.

The bar was scored into 24 pieces. The surface was smooth, but had an uneven sheen, scuffing, and some bubbles. The chocolate had a medium brown Bracken (PANTONE 19-1015) color. The bar had a hard snap.

Fruit, mostly smelling of prune, a coffee roast, and earth were the strongest scents I noticed in the aroma.

The taste began with an earthy coffee and cocoa roast, and then fruit flavors of raisin, plum, and berry came forth. Peanut grew dominant and was present most of the time. The taste was also sweet, bitter, and slightly chalky at the end.

Meadowlands described Venezuela as "nutty overtones, hints of raisin and dried cranberry".

The chocolate had a smooth melt. The length was medium, with the chocolate flavor lasting about 25 to 30 seconds after the chocolate was gone. The final aftertaste was bitter and slightly acidic.

Even though their bars are not certified, Minnesota maker Meadowlands uses organic and fair trade cacao. They craft their pure chocolate bars from only cacao beans and cane sugar.

Wrapped with gold foil-sided waxed paper inside a paper sleeve, the 2.5 ounce Peru bar contained 70% cacao beans and 30% cane sugar.

The bar was scored into 24 pieces. The surface was smooth, but had an uneven sheen, scuffing, a small dent, and a few adhered bits.

The color of the chocolate was a medium-dark brown Dark Brown (PANTONE 19-1012). The snap was hard.

The aroma contained floral, fruit, and earth scents. I smelled some citrus among the fruit scents.

An initial floral, fruity, earthy taste became sweet with honey and caramel. Roast flavors of cocoa and malt grew stronger, and revealed additional nut and coconut flavors. The taste was somewhat chalky.

Meadowlands described the chocolate as "light & delicate, hints of peach & coconut". I didn't notice the peach flavor.

The melt was less smooth, and with one taste I noticed a bit of graininess. The chocolate flavor lasted about 30 to 40 seconds after the chocolate was gone, giving a medium length. The final aftertaste was tannin, somewhat chalky, and somewhat acidic.

Clyo Howard and Beryl Wells Hamilton having been crafting bean to bar chocolate as Meadowlands in the city of the same name in Minnesota since 2013. All of their chocolate is made with organic, fair trade cacao beans that are grown sustainably and harvested ethically.

Along with all of their other unflavored 70% single origin chocolates, the Dominican Republic bar was made from nothing other than 70% cacao beans and 30% cane sugar. The bar was not certified organic or fair trade.

The 2.5 ounce bar came wrapped in gold foil-sided waxed paper inside a paper sleeve. It was scored into 24 pieces.

The surface of the chocolate was smooth, but had an uneven sheen, scuffing, a few adhered bits, and some very tiny bubbles in the corners of the pieces.

Dominican Republic had a medium brown Dark Brown (PANTONE 19-1012) color. The bar had a medium hard snap.

Scents of roast, fruit, and earth were present. The fruit scent included berry and the earthiness smelled musty.

The taste began with a earthy soil flavor until the fruit, roast, nut, and spice came forth. I tasted fruit flavors of blueberry, citrus, and date. The roast seemed slightly burnt. A molasses sweetness was evident. The taste was also tannin and bitter.

The melt was smooth, but quite fudgy. The length was long, with the chocolate flavor lasting 50-55 seconds after the chocolate was gone. The finish was tannin and somewhat acidic.

I liked the interesting combination of flavors, but found the fudgy melt undesirable. Overall, it was a solid chocolate among single origin Dominican Republic bars.

Valrhona blended a variety of their Grand Cru cacao to make Andoa. The bar reviewed here was made on 3 October 2013 with a best before date of February 2015.

The ingredients of Andoa were cacao beans, cane sugar, cocoa butter, and soy lecithin. Cocoa solids made up 70%.

The 70 gram bar came wrapped in brass colored foil inside a paper box. It was scored into 20 uneven pieces and had imprints of Valrhona's logo and name. The surface was great other than some tiny bubbles in a few of the corners.

The chocolate was a medium brown Dark Brown (PANTONE 19-1012) color. The snap was medium hard.

Andoa gave off an aroma of roast, earth, fruit, and sweetness. The roast was a smoky cocoa. The earth scent was moldy. The fruit seemed to have a faint berry scent. I smelled a hint of marshmallow in the sweetness.

Initially, the taste was a combination of earth and a smoky roast. A berry fruit flavor grew and the roast added some tobacco flavor. I also tasted peanut and date, as well as sweetness.

The melt was smooth. The length was medium, with the flavor lasting about 25-30 seconds after the chocolate was gone. The finish was somewhat acidic, somewhat bitter, and slightly chalky.

You can purchase Andoa online for $7.49 directly from Valrhona. You can also buy Andoa online for $7.49 in the U.S. from Chocosphere and for £3.75 in the U.K. from Chocolate Trading Co.

Labooko Raw Chocolate 80% is Zotter's only unflavored raw dark chocolate bar. Although I haven't yet received confirmation, I believe they sourced the organic and fair trade cacao for this chocolate from Peru.

The chocolate was sweetened with organic coconut blossom sugar rather than cane sugar. The 80% cocoa solids included added organic and fair trade cocoa butter. A tiny amount of salt was among the ingredients.

I don't have information about the maximum temperature used in processing this chocolate, but a Zotter representative told me that their current flavored raw chocolate is kept below 69°C (156°F), which is well above the temperature limit of most raw food. Raw Chocolate 80% was crafted with a 12 hour conching time.

The two 35 gram bars came in Zotter's standard packaging for the Labooko line: separately wrapped in gold foil-sided wax paper that was glued into the folds of the heavy outer paper. The outer paper is printed with one of Andreas h. Gratze's dramatic drawings of a person.

Based on Zotter's recommended 14-month shelf life, the best before date of October 10, 2014, indicates these bars were produced in August 2013.

The color of the chocolate was a medium-dark brown Seal Brown (PANTONE 19-1314). Each bar had a "zotter" relief and imprints of "Labooko" and cacao pods. The snap was hard.

Raw Chocolate 80% had a wonderful aroma, with scents of floral, anise spice, and sweetness. To me, it also smelled a bit earthy and the floral scent seemed to include just a hint of jasmine.

The taste began with nut, roast, floral, and earth flavors. Dried fruit, and date in particular, developed, along with the anise from the aroma. The chocolate tasted acidic and tannin.

The melt was more smooth. The length was medium, with the chocolate flavor lasting 20 to 25 seconds after the chocolate was gone. The finish was tannin, acidic, and slightly bitter.

Lindy likes raw chocolate, and rates Raw Chocolate 80% as her current favorite. I was somewhat less impressed, but still ranked it among raw chocolates as second only to Pacari Raw 70% (and the best raw chocolate without cane sugar). You can see our raw chocolate rankings on the bottom of our Chocolate Rankings page and our unranked list of (cane) sugar-free chocolates on the bottom of our Chocolate Lists page.

It appears that Labooko Raw Chocolate 80% is no longer on Zotter's website. However, you can still purchase it online for $7.49 from NewLeaf Chocolates or from Chocolate Voyages.

Austrian bean to bar chocolate maker Zotter crafts several lines of chocolate, including the Labooko line with several single origin bars. High-End 96% was made from organic cacao from Peru and 4% organic raw cane sugar. The complete ingredients included a tiny amount of salt.

High-End 96% was certified organic and fair trade. Zotter revealed on the packaging and on their website that the formulation for this particular chocolate included 34 hours of conching.

Labooko products each contain two 32.5 gram bars wrapped in gold foil-sided wax paper. Those wrapped bars are glued into the folds of a heavy outer paper. Because the glue must be strong enough to hold the bars in place, it is also so adhesive that it is often difficult to remove the bars from the packaging without tearing the foil and sometimes breaking the bars. The glue also complicates rewrapping a bar if you do not finish it. The packaging is far from ideal.

The best before date on the bars reviewed here was October 8, 2014. Zotter indicated that the bars have a 14-month shelf life, so they were produced in August, 2013.

Each bar had a "zotter" relief and imprints of "Labooko" and cacao pods. Their color was a medium brown Dark Brown (PANTONE 19-1012). The bars had a hard snap.

Scents of earth, roast, and fruit were present, along with an unusual astringency. The roast contained some smoke, and the fruit included citrus and a berry scent that Lindy identified as cherry.

High-End 96% tasted of earth, roast, nut, and bitterness. I also found it sour, but Lindy didn't experience that. For her, the roast and nut flavors were noticeably stronger than the earthiness.

The melt was nicely smooth (almost more smooth). The chocolate flavor lasted 30 to 35 seconds after the chocolate was gone, giving a medium length. The final after-taste was bitter, somewhat acidic, and slightly sour.

Overall, other than the astringent aroma, this was a good chocolate. However, I found their Labooko Peru 100% much better than this High-End 96% from the same origin.

You can purchase Labooko High-End 96% online for 3,35€ directly from Zotter or for $7.49 from NewLeaf.

The Labooko line of Austrian chocolate maker Zotter includes more than a dozen unflavored single origin chocolates. Labooko products come as a package of two individually wrapped 35 gram bars.

The ingredients of Brasilien were 70% cocoa solids (cocoa mass plus added cocoa butter), raw cane sugar, and salt. All of the ingredients other than salt were certified organic and fair trade. The cacao for this chocolate was sourced from Brazil and fermented and dried there by the Vronski and Monta families.

The two bars were wrapped in gold foil-sided wax paper and each glued into a fold of the the heavy outer paper wrapper. The best before date was February 1, 2014. Unfortunately, I did not photograph the bars for this review.

The bars had a relief of "zotter" on a small smooth upper portion and imprints of "Labooko" and stylized cacao pods (one of which was covered in writing) on a textured lower portion. The chocolate had a medium-dark brown Dark Brown (PANTONE 19-1012) color.

Brasilien had a hard snap. The aroma contained earth, spice, and sweetness. The earth scent was primarily hay. The spice included anise. The sweetness reminded me of molasses.

The taste began with a cocoa roast and some earthiness. Fruit flavors developed, including raisin, blackberry, and pear. The chocolate tasted sweet, with a mixture of molasses and honey flavors.

The melt was more smooth. The length was medium, with the chocolate flavor lasting about 20 to 25 seconds after the chocolate was gone. The final aftertaste was somewhat sour and somewhat salty.

Austrian chocolate maker Zotter makes several fair trade and organic bean to bar chocolates. They produce several unflavored single origin chocolates under their Labooko line as well as a huge variety of flavored chocolates.

Zotter sourced the cacao for Labooko Papua Neuguinea 75% from an organic and fair trade cooperative in Papua New Guinea. The ingredients of this chocolate were cocoa mass, raw cane sugar, cocoa butter, and salt. All of the ingredients other than salt were certified organic and fair trade. The salt content was 1% and cocoa solids (mass and butter) were 75%.

Papua Neuguinea 75% was sold in the standard Labooko packaging containing two 35 gram bars. Each bar was individually wrapped in gold foil-sided wax paper that was glued into the folds of a heavy outer paper wrapper (which was taped closed).

The bar itself had a relief of "zotter" on a small smooth upper portion of the bar and imprints of "Labooko" and stylized cacao pods (one of which was covered in writing) on a textured lower portion of the bar. The best before date was November 27, 2013.

Unfortunately, the chocolate appeared to have bloomed slightly and had a medium brown Deep Taupe (PANTONE 18-1312) color. There were some bits of adhered chocolate and the surface was scuffed.

The snap was hard, almost very hard. Papua Neuguinea's aroma included scents of musty earth, roast, smoke, spice, and vanilla.

The taste contained flavors of roast, fruit, earth, and spice. The strong roast was mostly coffee and smoke. The only distinctive fruit flavor I identified was blackberry. The taste was also sweet with a molasses flavor and tannin.

The chocolate had a smooth melt. The chocolate flavor lasted more than 45 seconds after the chocolate was gone, giving a long length. The finish was tannin and somewhat bitter.

You can purchase Labooko Papua Neuguinea 75% online for €3,35 directly from Zotter.

As you probably read in our review of their 85% Cacao bar, Pascha began selling chocolate this year that is completely free of exposure to any of the eight food allergens recognized by the U.S. F.D.A.

70% Cacao was made in Peru from local cacao. The bar was certified organic, verified non-GMO, certified fair trade, and certified kosher.

The ingredients were cocoa mass, sugar, cocoa butter, cocoa powder, and vanilla, all of which were organic. Cocoa solids totaled 70%.

The bar was the traditional size for chocolate bars: 100 grams. It came sealed in plastic inside a paper box. The bar was scored into 24 pieces, half imprinted with parallel lines and half imprinted with the image of someone carrying a basket of cacao pods. The best before date was May 21, 2014.

The color of the chocolate was a medium brown Dark Brown (PANTONE 19-1012). The surface was smooth, with a little scuffing and some adhered bits of chocolate.

70% Cacao had a medium hard snap. The aroma contained scents of smoky roast, vanilla, earth, spice, and sweetness.

The chocolate tasted sweet, with vanilla, fruit, roast, and nut flavors. The sweetness seemed to be a combination of butterscotch and honey. The vanilla flavor was strong. The fruit included citrus, grapefruit, and berry. I also tasted some chalkiness.

The melt was smooth. The length was medium, with the chocolate flavor lasting about 35 seconds after the chocolate was gone. The finish was tannin, somewhat acidic, slightly chalky, and slightly sour.

This chocolate bar surprised me. While not perfect, this was a very good chocolate, which would be an accomplishment for anyone, but is especially noteworthy for a new company.

You can purchase Organic Dark 70% Cacao online directly from Pascha in packs of 5 bars for $25, or from Chocosphere for $5.30 individually, $24.65 for five, or $46.60 for ten.

In March, Simon Lester officially launched Pascha Chocolate in Toronto, Canada, to provide "passionately pure" chocolate that is organic and avoids potential allergic reactions. Their facility has no exposure to peanuts, tree nuts, soy, dairy, wheat, gluten, or egg. Pascha makes two unflavored dark chocolate bars (85% Cacao and 70% Cacao), a chocolate bar (55% Cacao), and two flavored chocolate bars (55% with Goldenberries and 55% with Cocoa Nibs).

Pascha not only sources their cacao in Peru, but also works with a small independent factory there to make their chocolate bars locally. 85% Cacao was certified organic, non-GMO, fair trade, and kosher. The bar was also labeled vegan. While still caring about the societal aspects of cacao production, Simon focuses primarily on the consumer experience of Pascha chocolate.

85% Cacao included cocoa powder among its ingredients, which is extremely unusual. Simon explained that they press cacao at the factory and experimented with varying liquor, butter, and powder to get the result they wanted. All of the ingredients of 85% Cacao were organic: cocoa mass, cocoa powder, sugar, cocoa butter, and vanilla.

The large 100 gram bar came sealed in plastic inside a paper box. It was scored into 24 pieces, each imprinted with either parallel lines or an image of someone with a basket of cacao pods on their back. The best before date was May 20, 2014.

The chocolate had a medium brown Bracken (PANTONE 19-1015) color. The surface was smooth. There were some adhered bits of chocolate and several tiny bubbles in the corners. The bar had a hard snap.

Roast, nut, and vanilla were predominant in the aroma. The roast contained malt and smoke. I also smelled spice.

85% Cacao tasted initially of a malt roast, and then flavors of nut, wood, and fruit came forth. The fruit flavor was generally citrus and included grapefruit in particular. During two passes, the nuttiness was noticeably stronger than the other flavors. The taste was also bitter, chalky, and somewhat sour.

The melt was smooth. The chocolate flavor lasted about 30 to 35 seconds after the chocolate was gone, giving a medium length. The finish was tannin, somewhat acidic, and slightly sour.

The nutty flavor and nut-free production make this an especially interesting chocolate for someone allergic to nuts to taste.

You can purchase Organic Dark 85% Cacao online directly from Pascha in packs of 5 bars for $25, or from Chocosphere for $5.30 individually, $24.65 for five, or $46.60 for ten.

Josef Zotter is the vision behind Austrian chocolate maker Zotter. They opened their own chocolate factory in 2006, and craft fair trade and organic chocolate from bean to bar. Zotter produces several single origin chocolates as well as a huge variety of flavored chocolates. Labooko is their line of chocolate bars that includes single origin and pure dark chocolates.

Labooko Peru 100% is their only chocolate made from 100% cocoa mass (with no added cocoa butter). As with all of the Labooko line, this chocolate was sold as a package of two 35 gram bars. Each bar was wrapped in gold foil-sided wax paper that was glued into the folds of a heavy outer paper wrapper (which was taped closed).

The bar itself had a relief of "zotter" on a small smooth upper portion of the bar and imprints of "Labooko" and stylized cacao pods (one of which was covered in writing) on a textured lower portion of the bar. The best before date was April 19, 2014. Based on the described shelf life of 14 months, the bar was likely produced in February.

The color of the chocolate was a medium brown Bracken (PANTONE 19-1015). The overall appearance was great, with some tiny bits of adhered chocolate on the surface.

A hard snap revealed its nice aroma of earth, roast, floral, and spice. The roast scent was somewhat smoky.

The taste of Peru 100% contained roast, earth, and fruit flavors. The roast included smoke and cocoa. I also tasted some sourness.

The chocolate had a smooth melt, not far from more smooth. The length was long, with the chocolate flavor lasting 40 to 45 seconds after the chocolate was gone. The finish was tannin and slightly sour, without any bitterness.

Overall, this was a wonderfully pleasant surprise and a great 100% bar. Even though the taste was not especially interesting, it was good, and the appearance, length, and finish were all excellent.

You can purchase Labooko Peru 100% online for €3,35 directly from Zotter or for $7.99 from Chocolopolis.

U.S. chocolate maker Colin Gasko hand-crafts single origin bean to bar chocolate as Rogue Chocolatier. As you've probably read in our enthusiastic reviews of his other bars (Hispaniola, Piura, Rio Caribe, Sambirano, and Silvestre), Colin seeks out excellent cacao, works with farmers to help improve fermentation and drying, pays 2-4 times fair-trade prices, and maintains his focus on quality during every step as he produces each chocolate bar.

All of Rogue's chocolate is absolutely pure: made from only cacao beans and cane sugar. The factory in Three Rivers, Massachusetts, is soy-free, nut-free, wheat-free, and dairy-free. The ingredients of Balao were 75% cacao beans from Ecuador and 25% cane sugar.

Rogue provided an insert with extensive information about the cacao of this bar:
Vicente Norero of Camino Verde in Balao, Ecuador, is obsessive about quality. He has painstakingly renovated 500 hectares of traditional Ecuadorian varieties of cacao on his farm and in the process is raising the bar for Ecuadorian beans. He carefully controls fermentation and drying following the latest science and then tastes the liquor to determine profile. Vicente even goes so far as to sort cacao pods by phenotype (shape) and process them differently! For the Balao bar, we worked with Vicente to process two special lots. We blended two phenotype-optimized fermentations to create the world's first single-farm blend. One fermentation is more floral, green, and herbal and the other more spicy, woody, and fruity. The combination produces a remarkable chocolate that highlights Vicente's passion.

The 60 gram bar came sealed in a plastic pouch inside a heavy white paper envelope. It arrived with the top corner broken. The bar reviewed here was from batch 1 of Balao chocolate and was produced in December 2012.

Balao had a medium-dark brown Bracken (PANTONE 19-1015) color. The bar was a single unscored slab. It was smooth and had a lovely glossy sheen. There was a spot of unevenness in the sheen, and some adhered bits of chocolate. The bar had a hard snap.

The aroma contained earth, wood, spice, and floral scents. The earthiness was musty, and the woody aspect smelled distinctly of cedar.

The chocolate tasted much like it smelled, but without the cedar. An initial earthiness was soon joined by spice and fruit. As the taste became sweet, it seemed to me that the fruit included papaya. Woodiness and floral flavors were also present.

I categorized the melt as more smooth, though it was nearly creamy. The length was also remarkably long, with the chocolate flavor lasting 45 to 50 seconds after the chocolate was gone. The finish was tannin and slightly sour.

The superb sheen, wonderful melt (with no added cocoa butter), and enduring length were evidence of the production quality of this chocolate. Overall, this was the best Ecuador bar I've tasted in a long time.

You can purchase Balao 75% online for $13.00 directly from Rogue or for $11.99 from Chocolopolis. I've never purchased chocolate from them before, but I also found it available from Bar & Bean for only $8.00!

In 2011 we reviewed three of Askinosie's four unflavored bean to bar dark chocolates: Cortés Honduras, San Jose Del Tambo Ecuador, and Tenende Tanzania. Today, we're finally posting a review of the fourth: Davao Philippines.

As you might recall from those prior reviews, Shawn Askinosie has developed personal relationships with the farmers who grow his cacao. He also shares the profits from his chocolate with them. The Trinitario cacao for this chocolate comes from the Davao region in the southeast Philippines. Peter Cruz is the lead farmer there, and is pictured on the wrapper.

Davao is the first single origin chocolate made by anyone from Philippine cacao. The 77% cocoa solids in this chocolate consisted of 75% cacao and 2% added cocoa butter. The remaining ingredient was organic cane juice (the other 23%). Note that the cocoa butter was actually pressed from the same Davao cacao, rather than a cheaper, lower quality cocoa butter used by most chocolate makers.

The 85 gram bar was scored into 18 pieces, each with a single letter of "Askinosie chocolate". It came wrapped in NatureFlex™ inside a waxed brown paper bag.

Askinosie uses a best before date of 1 year after the bar was produced as a "Choc-o-lot #" to identify the production run of the chocolate bar. The Choc-o-lot # is stamped on each wrapper and you can view a brief production history by entering it on their homepage. The Choc-o-lot # of the bar reviewed here was 060613, indicating it was finished on June 6, 2012.

The color of Davao was a medium-dark brown Bracken (PANTONE 19-1015). The surface was smooth and the bar looked great other than some small imperfections: a few tiny bubbles in the raised lettering, some adhered bits, and a couple of places where the sheen was uneven. The bar had a medium hard snap.

Davao had an earthy aroma, with scents of roast, fruit, and sweetness. The roast contained both malt and tobacco.

The earthiness of the aroma was just as prominent in the taste. The earthy flavor was acidic and bitter, but not unpleasantly so. I tasted additional flavors of fruit, wood, roast in the form of smoke and cocoa, caramel, and some sourness.

The chocolate had a melt that was more smooth. The length was medium, with the chocolate flavor lasting 25 to 30 seconds after the chocolate was gone. The finish was bitter, somewhat acidic, and slightly sour.

You can purchase Askinosie Davao Philippines online directly from Askinosie for $8.00. To combine it with the purchase of other chocolate, you can buy Davao for $7.99 from Chocolopolis or Caputo's.

Nova Monda makes three single origin unflavored chocolate bars: Purple Label 70%, Green Label 75%, and Gold Label 80%. Purple and Green are made with cacao from Nicaragua; Gold is made with cacao from Ecuador. Nova Monda participates in direct trade with farming cooperatives and supports sustainable cacao growing.

Green Label 75% is the first bar we've reviewed made with Nicaraguan cacao. The cacao bisiesto beans were grown near La Dalia. Green Label was made with 75% organic cacao and 25% organic cane sugar. Although both ingredients were organic, the bar was not certified. Nova Monda's website indicated that the cane sugar was evaporated cane juice.

The 52.7 gram (1.86 ounce) bar was scored into a dozen pieces. It came wrapped in gold foil sided wax paper in a paper sleeve. The best before date was October 2013.

The color of Green Label was a medium brown Dark Brown (PANTONE 19-1012). The bar had a smooth surface with an uneven sheen and some adhered bits of chocolate. There were also barely noticeable bubbles in several corners of the pieces. The snap was medium hard.

Green Label had an aroma of earth and spice. I smelled secondary scents of roast and sweetness.

The chocolate tasted initially of earth, sourness, and spice. I then experienced some acidity that gave me the odd sensation of carbonation. As Green Label melted, fruit flavors of raisin and a hint of cherry were revealed, along with a molasses sweetness.

The melt was smooth. The chocolate flavor lasted about 40 seconds after the chocolate was gone, giving a long length. The finish was somewhat sour, somewhat bitter, and somewhat acidic.

Overall, I found the flavor and carbonation sensation interesting, and the length was remarkably long. However, I didn't like the aftertaste. I expect to try Green Label again next year, if only to check if that sense of carbonation is still present.

You can currently purchase Green Label 75% online directly from Nova Monda for $4.99, a $1.00 discount from their regular $5.99 price.

Nova Monda makes primarily jar chocolate, but in 2011 they began making chocolate bars. They currently make three single origin unflavored chocolate bars: Purple Label 70%, Green Label 75%, and Gold Label 80%. Purple and Green are made with cacao from Nicaragua; Gold is made with cacao from Ecuador.

Gold Label 80% was made with cacao beans from a cooperative in Punta Galera in the Esmeraldas province of Ecuador. The beans were roasted at a facility in Ecuador, and Nova Monda bought the nibs and liquor for their chocolate. Although they purchased after roasting, Nova Monda was involved with the fermenting, drying, and roasting processes for their cacao.

According to the wrapper, Gold Label contained 80% cacao and 20% cane sugar. Nova Monda's website indicated that the cane sugar was evaporated cane juice. Both ingredients were organic, though the bar was not certified.

The unusual size 52.7 gram (1.86 ounce) bar was scored into 12 pieces. It came wrapped in gold foil sided wax paper in a paper sleeve. The best before date was October 2013.

The chocolate was a medium-dark brown Seal Brown (PANTONE 19-1314) color. The bar had a smooth surface with an uneven sheen and several bubbles. There were also adhered bits of chocolate on the bar. The snap was hard.

Floral, dairy, and earth scents were present in the aroma. I also smelled some roast.

Gold Label tasted floral, woody, and earthy. I experienced sweetness, sourness, and acidity. As the chocolate melted, fruit flavors of banana and berry developed, along with a wine flavor. I tasted none of the roast from the aroma. This chocolate was likely made with a light roast.

The chocolate had a smooth melt, nearly more smooth. The length was medium, with the chocolate flavor lasting 25 to 30 seconds after the chocolate was gone. The finish was sour and tannin.

You can currently purchase Gold Label 80% directly from Nova Monda for $4.99, a $1.00 discount from their regular $5.99 price.

U.S. chocolate makers Ryan Cheney and Nate Hodge established Raaka Virgin Chocolate and released their first bars in 2010. Their concept of virgin chocolate is not quite the same as raw, as they allow slightly higher temperatures. Raaka does not roast their cacao beans and processes all of their chocolate below 135 degrees Fahrenheit (57°C). They currently make two single origin bars (Ecuador and Madagascar) and five flavored bars.

Raaka buys beans from cooperatives, always paying above fair trade prices. They use only organic ingredients and make their chocolate in a nut-free environment. They purchased the cacao beans for their Ecuador 85% Dark bar from APROCA. The other ingredients were cane sugar and cocoa butter.

The bar was double-wrapped with silver foil sided wax paper and craft paper. It was sealed closed by a large product sticker on the back. There was no best before date. The batch number was 20.

Ecuador 85% had a medium-dark brown Seal Brown (PANTONE 19-1314) color. The unscored bar was uneven, with one side thicker than the other. The surface was smooth, with an uneven sheen, some scuffing, one bubble, and a some adhered bits of chocolate. The snap was hard.

The aroma of the chocolate contained floral, earth, fruit and spice scents. The earth was musty. I also smelled just a hint of mint.

The initial taste was earthy and sour before the fruit was revealed. I tasted mostly melon with a little berry. I also experienced flavors of wine, floral, and nut in form of almond. The back label listed tasting notes of "almond, melon, molasses", but I didn't taste the molasses.

The chocolate had a smooth melt. The chocolate flavor lasted 15 to 20 seconds after the chocolate was gone, giving a short length. The finish was tannin, somewhat sour, somewhat acidic, and slightly chalky.

You can purchase Ecuador 85% Dark directly from Raaka for $8.00 for a 2.5 ounce bar (or $5.00 for 1.2 ounce bar).
